Ingredients

  • 8 egg roll wrappers
  • 1 cup cooked corned beef, shredded
  • 1 cup cooked cabbage, shredded
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, chopped
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, mix together the shredded corned beef, cabbage, cheddar cheese, green onions, Dijon mustard, and Worcestershire sauce.

  2. Place an egg roll wrapper on a clean surface. Spoon about 2 tablespoons of the corned beef mixture onto the center of the wrapper.

  3. Fold the bottom corner of the wrapper up over the filling. Fold the sides in towards the center, then roll the wrapper tightly into a cylinder shape.

  4. Moisten the edges of the wrapper with water to seal. Repeat with the remaining wrappers and filling.

  5. Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).

  6. Fry the egg rolls in batches for about 5 minutes, or until golden brown and crispy. Drain on paper towels.

  7. Serve the Irish egg rolls hot with your favorite dipping sauce.
