Ingredients

  • 2 cups dried split peas
  • 1 ham hock or smoked ham bone
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 bay leaf
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Rinse the split peas and set them aside.

  2. In a large pot, add the ham hock, onion, carrots, celery, garlic, chicken or vegetable broth, and bay leaf. Bring to a boil.

  3. Reduce heat to low and simmer for 1 hour, or until the ham hock is tender and the soup is flavorful.

  4. Remove the ham hock from the pot and shred the meat. Return the meat to the pot.

  5. Add the rinsed split peas to the pot and simmer for another 45 minutes to 1 hour, or until the split peas are soft and the soup has thickened.

  6. Season with salt and pepper, to taste.

  7. Serve hot, garnished with chopped fresh parsley.
