  • 2 cups dried yellow split peas
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup diced ham
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Rinse the split peas under cold water and remove any debris.

  2. In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, diced carrots, and celery. Cook until the vegetables are softened, about 5 minutes.

  3. Add the diced ham to the pot and cook for a few minutes until slightly browned.

  4. Add the rinsed split peas, broth, water, bay leaf, and dried thyme to the pot. Bring to a boil over high heat.

  5. Reduce heat to low and simmer, partially covered, for about 1 hour or until the split peas are tender and starting to break down. Stir occasionally to prevent sticking.

  6. Remove the bay leaf from the soup. Use an immersion blender or a regular blender to puree the soup until smooth. If using a regular blender, work in batches and be careful with the hot liquid.

  7. Season with salt and pepper to taste. Serve hot with crusty bread on the side.
