  • 2 cups dried split peas
  • 1 onion, chopped
  • 3 carrots, diced
  • 3 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Rinse the split peas and set aside.

  2. Press the “Saute” function on the Instant Pot and add the onion, carrots, celery, and garlic. Cook until softened.

  3. Add the rinsed split peas, vegetable broth, bay leaf, thyme, salt, and pepper to the Instant Pot. Stir well to combine.

  4. Secure the lid on the Instant Pot and set the vent to the sealing position.

  5. Select the “Manual” or “Pressure Cook” function and set the timer for 10 minutes on high pressure.

  6. Once the cooking time is complete, allow for a natural release for 10 minutes, then carefully switch the vent to the venting position to release any remaining pressure.

  7. Remove the bay leaf and use an immersion blender to blend the soup until smooth and creamy.

  8. Taste and adjust the seasoning if needed.

  9. Serve the soup hot, garnished with fresh parsley.
