How To Make Creamy Split Pea Curry

Ingredients
- 1 cup split peas
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder
- 1 cup coconut milk
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions

Wash the split peas and soak them in water for 1 hour.

Heat oil in a large pot and add onions, garlic, and ginger. Saute until onions turn translucent.

Add tomatoes and cook until they turn soft.

Drain the split peas and add them to the pot. Stir well.

Add cumin powder, coriander powder, turmeric powder, and chili powder. Mix everything together.

Pour in coconut milk and add salt. Stir well and bring to a boil.

Reduce the heat, cover the pot, and let it simmer for 30 minutes or until the split peas are cooked and tender.

Garnish with fresh coriander leaves.

Serve hot with rice or naan bread.
