  • 4 cups of frozen hash browns
  • 4 cups of chicken broth
  • 2 cups of diced potatoes
  • 1 cup of diced onions
  • 1 cup of diced carrots
  • 1 cup of diced celery
  • 2 cloves of garlic, minced
  • 1 tsp of dried thyme
  • 1 tsp of dried parsley
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 1 cup of heavy cream
  • Optional toppings: shredded cheddar cheese, chopped green onions


  1. In a large pot, heat some oil and add onions, carrots, celery, and garlic. Cook until they are softened.

  2. Add diced potatoes, chicken broth, dried thyme, dried parsley, salt, and black pepper. Bring the mixture to a boil, then reduce heat and simmer until potatoes are tender.
