Ingredients
- 1 whole chicken, cut into pieces
- 8 cups of water
- 2 slices of ginger
- 2 cloves of garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 2 tablespoons of soy sauce
- 1 tablespoon of rice vinegar
- Salt and pepper to taste
- Fresh cilantro, for garnish

In a large pot, bring the water to a boil. Add the chicken pieces and ginger slices, and reduce heat to a simmer. Cook for 1 hour, skimming off any impurities that rise to the surface.

Remove the chicken from the pot and set aside to cool. Once cool enough to handle, shred the meat and discard the bones.

Return the shredded chicken to the pot, along with the minced garlic, carrots, celery, and onion. Cook for an additional 30 minutes, until the vegetables are tender.

Stir in the soy sauce and rice vinegar, and season with salt and pepper to taste.
