Ingredients

  • 4 salmon fillets, skin on (about 6 ounces each)
  • 1 cup shelled pistachios
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a food processor, pulse the pistachios until finely crushed. Transfer to a shallow dish and mix in the breadcrumbs, Parmesan cheese, lemon zest, salt, and pepper.

  3. Dip each salmon fillet, flesh side down, into the pistachio mixture, pressing gently to adhere the crust.

  4. Heat the olive oil in a large oven-safe skillet over medium-high heat. Place the salmon fillets, skin side down, in the skillet and cook for 2-3 minutes until the skin is crispy.

  5. Transfer the skillet to the preheated oven and bake for 8-10 minutes until the salmon is cooked through and the crust is golden brown.

  6. Serve immediately and enjoy!
