How To Make Eggplant Pasta Recipe

Ingredients
- 8 oz pasta
- 1 large eggplant, diced
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil leaves for garnish
Instructions

Cook pasta according to package instructions. Drain and set aside.

In a large pan, heat olive oil over medium heat. Add onion and garlic, sauté until softened.

Add diced eggplant to the pan and cook until golden brown and tender.

Stir in diced tomatoes, dried oregano, dried basil, and red pepper flakes. Season with salt and pepper.

Reduce heat to low and let simmer for 15-20 minutes until flavors are well combined.

Serve the eggplant sauce over cooked pasta. Top with grated Parmesan cheese and garnish with fresh basil leaves.
