Ingredients

  • 1 bunch of fresh turnip greens, washed and chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of water
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 1/4 tsp of red pepper flakes
  • 1 tbsp of olive oil
  • Grated Parmesan cheese (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they become translucent.

  2. Add the chopped turnip greens to the pot and cook for about 5 minutes until they wilt.

  3. Pour in the vegetable broth and water. Season with salt, black pepper, and red pepper flakes. Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes.

  4. Remove from heat and let the soup cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth.

  5. Return the soup to the pot and heat it over medium heat until warmed through.

  6. Serve the turnip green soup hot, garnished with grated Parmesan cheese.
