- 2lbsstewing beef
- 14ozartichoke hearts,(1 can) drained and halved
- 1onion,diced
- 4clovesgarlic,chopped or more to taste
- 32fl ozbeef broth,(1 container)
- 15oztomato sauce,(1 can)
- 14½oztomatoes,(1 can) diced
- ½cupKalamata olives,pitted and roughly chopped
- 1tspdried oregano
- 1tspdried parsley
- 1tspdried basil
- ½tspground cumin
- 1bay leaf
Instructions

Heat oil in a large pot over medium-high heat. Cook beef in hot oil for about 2 minutes per side until browned. Transfer beef to a slow cooker.

Cover with artichoke hearts, onion, and garlic. Pour in beef broth, tomato sauce, and diced tomatoes. Stir in olives, oregano, parsley, basil, cumin, bay leaf.
