Loaded Chickpea Lentil Beef Stew Recipe

How To Make Loaded Chickpea Lentil Beef Stew

  • 1 tbsp olive oil (extra virgin )
  • 1/2 lb chuck beef (chopped)
  • 1 red bell pepper (diced)
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika
  • 14 oz chickpeas (drained, rinsed)
  • 14 oz lentils (drained, rinsed)
  • 3 cups bolognese sauce
  • 2/3 water
  • 1/4 cup fresh coriander (chopped, plus extra sprigs to serve)
  1. Heat oil in a large, deep frying pan over medium-high heat.

  2. Add beef and red pepper. Cook, stirring occasionally, for 35 minutes or until softened and beef is tender.

  3. Add cumin, coriander and paprika. Cook, stirring, for 1 minute or until fragrant.

  4. Add chickpeas, lentils, bolognese sauce and water. Cook for 8 to 10 minutes or until heated through, stirring occasionally.

  5. Stir in the coriander and serve.
