Ingredients
- 2 cups sushi rice
- 4 sheets nori seaweed
- 8 oz yellowtail fish, thinly sliced
- 1/4 cup mayonnaise
- 2 tsp Sriracha sauce
- 1/2 cucumber, julienned
- 2 green onions, thinly sliced
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions

Cook sushi rice according to package instructions and let cool.

Lay a sheet of nori seaweed on a bamboo sushi mat.

Wet your hands with water and spread 1/2 cup of sushi rice evenly over the nori, leaving a 1-inch border at the top.

Spread a small amount of mayonnaise and Sriracha sauce onto the rice.

Place a few slices of yellowtail fish on top of the sauces.

Add a layer of cucumber and green onions.

Carefully roll the sushi using the bamboo mat, applying gentle pressure as you go.

Wet a sharp knife with water and slice the sushi roll into bite-sized pieces.
