How To Make Waterfall Beef Salad

Ingredients
- 1 lb beef sirloin, thinly sliced
- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, torn
- 1/4 cup roasted peanuts, chopped
- for the dressing:
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 clove garlic, minced
- 1 Thai chili, thinly sliced (optional)
Instructions

Preheat a grill or grill pan over medium-high heat. Season the beef slices with salt and pepper.

Grill the beef for 2-3 minutes per side, until cooked to your desired level of doneness. Remove from heat and let it rest for 5 minutes. Slice the beef into thin strips.

In a large bowl, combine the salad greens, cucumber, red onion, cherry tomatoes, cilantro, and mint leaves.

In a small bowl, whisk together the lime juice, fish sauce, soy sauce, honey, garlic, and Thai chili (if using).

Pour the dressing over the salad and toss to combine.

Divide the salad among serving plates. Top with the sliced beef and sprinkle with roasted peanuts.
