Ingredients

  • 1 cup dates, pitted and chopped
  • 1 cup boiling water
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch baking dish.

  2. In a bowl, pour boiling water over the dates and let them soak for 10 minutes. Then, add vanilla extract and baking soda.

  3. In a separate bowl, mix together flour, brown sugar, melted butter, and egg.

  4. Combine the date mixture with the flour mixture and mix well. If desired, fold in chopped nuts.

  5. Pour the batter into the prepared baking dish and bake for 1-1.5 hours, or until a toothpick inserted into the center comes out clean.

  6. Serve warm with caramel sauce or vanilla ice cream.
