Ingredients

  • 1 sheet of puff pastry, thawed
  • 200g purple sprouting broccoli, trimmed
  • 1 leek, sliced
  • 100g almonds, roughly chopped
  • 150ml heavy cream
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Roll out the puff pastry and line a tart tin with it.

  3. Boil the broccoli for 3-4 minutes until slightly tender. Drain and set aside.

  4. In a pan, sauté the leeks until softened.

  5. Spread the leeks over the puff pastry. Top with the broccoli and almonds.

  6. In a bowl, whisk together the cream, eggs, salt, and pepper. Pour over the tart filling.

  7. Bake in the preheated oven for 30-35 minutes until the tart is golden and set.

  8. Allow to cool for a few minutes before serving.
