Ingredients
- 1 sheet of puff pastry, thawed
- 200g purple sprouting broccoli, trimmed
- 1 leek, sliced
- 100g almonds, roughly chopped
- 150ml heavy cream
- 2 eggs
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

Roll out the puff pastry and line a tart tin with it.

Boil the broccoli for 3-4 minutes until slightly tender. Drain and set aside.

In a pan, sauté the leeks until softened.

Spread the leeks over the puff pastry. Top with the broccoli and almonds.

In a bowl, whisk together the cream, eggs, salt, and pepper. Pour over the tart filling.

Bake in the preheated oven for 30-35 minutes until the tart is golden and set.

Allow to cool for a few minutes before serving.
