How To Make Rosie’s Roast Chicken

- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

Preheat the oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the olive oil, dried thyme, dried rosemary, garlic powder, onion powder, salt, and black pepper.

Rub the spice mixture all over the chicken, making sure to coat it evenly.

Place the chicken on a roasting rack in a roasting pan.

Roast the chicken in the preheated oven for 30 minutes.

Reduce the oven temperature to 375°F (190°C) and continue to roast for another 1 hour, or until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer.

Remove the chicken from the oven and let it rest for 10 minutes before carving.
