How To Make Poached Beef Fillet with Watercress & Walnut Salad

Ingredients
- 600g beef fillet
- 1 liter beef stock
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 cup walnuts, roughly chopped
- 4 cups watercress
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions

In a large pot, bring the beef stock to a boil.

Add the beef fillet, onion, and garlic to the pot. Reduce the heat to low and simmer for 20 minutes.

Remove the beef fillet from the pot and set aside to cool.

In a mixing bowl, combine the walnuts, watercress, olive oil, and balsamic vinegar. Season with salt and pepper to taste.

Thinly slice the cooled beef fillet and arrange on a serving platter.

Spoon the watercress and walnut salad over the beef.
