Ingredients

  • 4 salmon fillets
  • 1 cup panko breadcrumbs
  • 2 tbsp chopped fresh parsley
  • 2 tsp dried bay leaves, crushed
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach leaves
  • 1 cup mixed wild mushrooms, sliced
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine the panko breadcrumbs, parsley, crushed bay leaves, salt, and pepper.

  3. Drizzle olive oil over the salmon fillets and coat them with the breadcrumb mixture.

  4. Place the salmon on a baking sheet and bake for 15-20 minutes, or until the crust is golden and the salmon is cooked through.

  5. Meanwhile, heat some olive oil in a pan over medium heat. Sauté the onion and garlic until softened.

  6. Add the spinach and wild mushrooms and sauté until the spinach has wilted and the mushrooms are tender.

  7. Stir in the heavy cream and Parmesan cheese, and season with salt and pepper to taste. Cook for another 2-3 minutes, until the sauce has thickened slightly.

  8. Serve the bay-crumbed salmon on a bed of the creamed spinach and wild mushrooms.
