How To Make Warm Bacon Cheddar Potato Salad

Don’t let the name fool you. This potato salad is excellent even when cold too. It has cheddar, bacon, and a lighter dressing made with sour cream.

Serves:

Ingredients

  • 7cupsbaby potatoes,skin on, chopped in half
  • ¼cupparsley leaves,fresh, chopped
  • 2greenonions,thinly sliced
  • cupscelery,chopped
  • 4eggs,hard boiled, chopped, optional
  • 1tsplemon-pepper seasoning
  • 1tbspdijon mustard
  • 6tbspmayonnaise
  • 1cupsour cream
  • 1cupcheddar cheese,shredded
  • 8slicesbacon,cooked crisp, chopped

Instructions

  1. In a large bowl, mix all ingredients except the potatoes. Set aside.

  2. Boil the potatoes for about 10 to 15 minutes until tender. Drain the potatoes and let sit until just warm.

  3. Combine warm potatoes with sour cream mixture and serve.
