Ingredients

  • 2 lb new potatoes, washed
  • 5 cups water, for boiling, plus more if necessary
  • salt and ground pepper, to taste

For Dressing:

  • 1 cup sour cream
  • 1 tbsp Dijon mustard, or grain mustard
  • ½ cup fresh dill, chopped
  • ¼ cup chives , or spring onions, chopped
  • lemon zest, from 1 lemon
  • lemon juice, from 1 lemon
  • salt and ground black pepper, to taste

To Serve:

  • 1 tbsp bacon bits, per serving
  • 2 tsp olive oil, per serving

Instructions

  1. Boil the potatoes in salted water until they just fall off a knife. Do not overcook. When potatoes are ready, drain and allow to cool down briefly.
  2. Prepare the dressing. Combine all the ingredients for the dressing.
  3. Season to taste with salt and pepper. Adjust accordingly
  4. Slice the potatoes in half and fold the dressing into the potatoes until fully incorporated. Adjust seasonings again if necessary.
  5. Drizzle olive oil around the salad and sprinkle bacon bits on top. Serve.
