How To Make Red Beet Salad

This red beet salad is a vibrant side dish with carrots, mayonnaise, and more. Our tasty salad will make for a great side to barbecues!

  • 2large beets,washed, stems cut off
  • 1cupcarrots,peeled, cooked
  • 1tbspcilantro,chopped
  • 1tbsponion,diced
  • 2tbsplight mayonnaise
  • salt and pepper


  1. Boil the beets in water for about 50 minutes or until soft.

  2. Peel and cut the beets into small ½-inch cubes.

  3. Cook the carrots until tender, then cut them into bite-sized cubes.

  4. Combine the diced onion, carrots, beets, mayonnaise, cilantro, salt and pepper in a large bowl.

  5. Serve, and enjoy!
