How To Make No Mayo Coleslaw

Bright and crunchy, this no mayo coleslaw is tossed with cabbage, carrots, and radish in olive oil and rice vinegar dressing.

Ingredients

  • 4cupscabbage,about ⅓ to ½ cabbage, thinly sliced
  • 1carrot,grated
  • 2radishes,thinly sliced
  • 1green onion,thinly sliced
  • ¼cupfresh cilantro,packed, chopped
  • 1tbspextra virgin olive oil
  • 1tbspseasoned rice vinegar,or plain rice vinegar with added sugar to taste
  • salt and freshly ground black pepper,to taste

Instructions

  1. Place the thinly sliced cabbage, grated carrot, radish slices, sliced green onions, and cilantro in a large serving bowl.

  2. Right before serving, sprinkle with olive oil, rice vinegar, salt, and pepper, and toss to coat.

  3. Serve immediately.
