Wilted Cabbage Salad with Bacon Recipe

This is what you call a French cabbage salad. It’s a great idea for when you you want to incorporate cabbage in a meal.  Skip the garlic, use cider vinegar, and it becomes a German cabbage salad. Add some sour cream and it becomes a Danish cabbage salad. It’s a perfectly versatile dish.

How To Make Wilted Cabbage Salad with Bacon

For a healthy meal, we came up with this cabbage salad using fresh shredded cabbage. Add some pieces of bacon for added flavor.

Ingredients

  • ½ lb bacon
  • 1 medium head cabbage, shredded
  • 1 onion, chopped
  • 1 clove garlic, minced
  • ½ cup tarragon vinegar

Instructions

  1. Place bacon in a large, deep skillet.

  2. Cook over medium high heat until evenly brown.
  3. Remove bacon, crumble and set aside.
  4. Reserve bacon fat. Add the onion and garlic and fry in the bacon fat until browned.

  5. Then add the vinegar.

  6. Bring to a simmer and add the cabbage and bacon.
  7. Sauté briefly and serve warm.
