The tropical flavors in this sweet and savory mango salad amplifies a filling meal! It’s served with smoky grilled chicken, and made in just 15 minutes.

  • 12ozchicken breast,(from 1 lb raw), grilled, sliced
  • 1cupavocado,diced
  • 1cupmango,(from 1½ mangoes), diced
  • 2tbspred onion,diced
  • 6cupsbaby red butter lettuce

For Vinaigrette:

  • 2tbspolive oil
  • 2tbspwhite balsamic vinegar
  • salt and fresh cracked pepper,to taste


  1. Whisk the olive oil, balsamic vinegar, salt, and pepper, then set aside.

  2. Toss the avocado, mango, chicken and red onion together.

  3. Fill a large salad platter with baby greens or divide on 4 small dishes. Top with chicken-avocado mixture, then drizzle half the dressing on top.

  4. Serve with remaining dressing, and enjoy!
