Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 ripe avocados, pitted and peeled
  • 3 tbsp mayonnaise
  • 2 tbsp sour cream
  • 2 tbsp lime juice
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 8 cups mixed greens
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add shrimp and cook until pink, about 3-4 minutes. Set aside.

  2. In a blender, combine avocado, mayonnaise, sour cream, lime juice, garlic, salt, and pepper. Blend until smooth and creamy.

  3. In a large bowl, toss mixed greens, red onion, and cherry tomatoes. Add cooked shrimp and avocado dressing to the bowl and toss until well combined.

  4. Serve immediately and enjoy!
