A light and healthy salad comprised of fresh red tomatoes, shell pasta, cilantro and diced cucumber.

Ingredients
- ¼ cup cilantro, roughly chopped
- 1 cup arugula
- 1 cup cherry tomatoes, halves
- 1 cucumber, diced, and deseeded
- ½ cup red onion, finely chopped
- 2 tbsp lime juice, fresh
- 1 tsp granulated sugar
- ¼ tsp salt
- ¼ tsp black pepper
- 1 cup strozzapreti pasta, dry, cooked and drained
Instructions
- Place the cucumber, tomato, red onion, lime juice, cilantro, sugar, salt, and pepper in a bowl with the pasta. Toss gently.
- Transfer into a serving bowl and chill for at least 15 minutes before serving.
