This refreshing cilantro tomato pasta salad goes well with any Mexican-inspired dish. The cilantro in the salad will tie in quite nicely. Simply done in under 30-minutes to create this healthy dish.

A light and healthy salad comprised of fresh red tomatoes, shell pasta, cilantro and diced cucumber.

Ingredients

  • ¼ cup cilantro, roughly chopped
  • 1 cup arugula
  • 1 cup cherry tomatoes, halves
  • 1 cucumber, diced, and deseeded
  • ½ cup red onion, finely chopped
  • 2 tbsp lime juice, fresh
  • 1 tsp granulated sugar
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 cup strozzapreti pasta, dry, cooked and drained

Instructions

  1. Place the cucumber, tomato, red onion, lime juice, cilantro, sugar, salt, and pepper in a bowl with the pasta. Toss gently.
  2. Transfer into a serving bowl and chill for at least 15 minutes before serving.
