- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 parsnips, peeled and diced
- 2 potatoes, peeled and diced
- 1 cup Brussels sprouts, halved
- 1 teaspoon dried thyme
- Salt and pepper, to taste

Add the diced carrots, parsnips, and potatoes to the skillet. Cook until the vegetables are slightly softened, about 5 minutes.
