  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 parsnips, peeled and diced
  • 2 potatoes, peeled and diced
  • 1 cup Brussels sprouts, halved
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic and sauté until fragrant and transluscent.

  2. Add the diced carrots, parsnips, and potatoes to the skillet. Cook until the vegetables are slightly softened, about 5 minutes.

  3. Stir in the halved Brussels sprouts and dried thyme. Season with salt and pepper.

  4. Continue cooking the hash, stirring occasionally, until all the vegetables are tender and lightly browned, about another 10-15 minutes.

  5. Serve the winter vegetable hash hot, garnished with fresh herbs if desired.
