Ingredients

  • 1 pound of large shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 4 cups of mixed salad greens
  • 1 cup of cherry tomatoes, halved
  • 1 avocado, sliced
  • 4 hard-boiled eggs, sliced
  • 1/4 cup of sliced red onion
  • 1/4 cup of sliced black olives
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of chopped fresh dill
  • 1/4 cup of thousand island dressing

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a bowl, combine the shrimp, olive oil, minced garlic, paprika, salt, and black pepper. Toss to coat the shrimp evenly.

  3. Place the shrimp on the preheated grill and cook for 2-3 minutes per side, or until the shrimp is pink and opaque.

  4. Remove the shrimp from the grill and let it cool for a few minutes.

  5. In a large serving bowl, arrange the salad greens, cherry tomatoes, avocado slices, hard-boiled egg slices, red onion slices, and black olives.

  6. Top the salad with the grilled shrimp and sprinkle with chopped parsley and dill.

  7. Drizzle the thousand island dressing over the salad and toss gently to combine.

  8. Serve the Grilled Shrimp Louie salad immediately and enjoy!
