  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 cup dried lentils, rinsed
  • 4 cups vegetable broth
  • 2 cups water
  • 2 cups chopped winter vegetables (such as squash, sweet potatoes, or parsnips)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and cook until vegetables are softened, about 5 minutes.

  2. Add minced garlic, dried thyme, dried rosemary, and bay leaf to the pot. Cook for an additional minute.

  3. Stir in dried lentils, vegetable broth, and water. Bring to a boil, then reduce heat and simmer for 20 minutes.

  4. Add chopped winter vegetables to the pot and continue simmering for another 15 minutes, or until lentils and vegetables are tender.

  5. Season with salt and pepper to taste.

  6. Remove bay leaf from the soup.

  7. Serve hot, garnished with fresh parsley.
