  • 2 cups cooked corned beef, diced
  • 4 cups potatoes, peeled and diced
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.

  2. Add the onion and red bell pepper to the skillet and cook until softened, about 5 minutes.

  3. Add the minced garlic to the skillet and cook for an additional minute.

  4. Add the diced corned beef and potatoes to the skillet and stir to combine. Cook for 15-20 minutes, stirring occasionally, until the potatoes are crispy and golden brown.

  5. Sprinkle the paprika, salt, and pepper over the hash and stir to evenly distribute the seasonings.

  6. Cook for another 5 minutes, until everything is heated through and well combined.

  7. Remove the skillet from the heat and garnish with chopped fresh parsley.
