How To Make Golden Corral Copycat Potato Salad

  • 3 lbs russet potatoes
  • 1 white onion
  • 4 celery stalks
  • 1 green bell pepper
  • 1 garlic clove
  • 12 hard-boiled eggs shelled and chopped
  • 2 cups mayonnaise
  • 1 tbsp yellow mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 tsp dried dill


  1. Start by scrubbing and peeling your potatoes.

  2. Roughly chop the potatoes into pieces. However small or large is totally up to you.

  3. Chop the onion, celery, bell pepper, and garlic. Once again, the size of the pieces is entirely up to you though the bigger the pieces, the bigger the crunch (if you want a smoother potato salad, chop the veggies into smaller pieces).

  4. Add the vegetables into the large bowl containing the cooled potatoes.

  5. In a smaller separate bowl, combine the mayo, mustard, and spices.

  6. Add the mayo mixture to the large bowl and toss well, making sure the contents are coated and well combined.

  7. Sprinkle some garnishes, such as chopped chives or bacon bits, over your salad.

  8. Once you're done preparing your salad, serve at a picnic or barbecue and enjoy!
