Ingredients

  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 green bell pepper, chopped
  • 1/2 onion, chopped
  • 1 cup vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups uncooked elbow macaroni
  • 1 cup shredded cheddar cheese

Instructions

  1. Combine diced tomatoes, kidney beans, black beans, bell pepper, onion, vegetable broth, chili powder, cumin, garlic powder, salt, and pepper in a crockpot.

  2. Cover and cook on high for 3-4 hours or low for 6-8 hours.

  3. Cook the elbow macaroni according to package instructions.

  4. Add the cooked macaroni and cheddar cheese to the crockpot and stir until cheese is melted.

  5. Serve hot and enjoy!
