Ingredients
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 green bell pepper, chopped
- 1/2 onion, chopped
- 1 cup vegetable broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 cups uncooked elbow macaroni
- 1 cup shredded cheddar cheese
Instructions

Combine diced tomatoes, kidney beans, black beans, bell pepper, onion, vegetable broth, chili powder, cumin, garlic powder, salt, and pepper in a crockpot.

Cover and cook on high for 3-4 hours or low for 6-8 hours.

Cook the elbow macaroni according to package instructions.

Add the cooked macaroni and cheddar cheese to the crockpot and stir until cheese is melted.
