How To Make Crockpot Vegetarian Stuffed Peppers Recipe

Ingredients
- 4 bell peppers
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1/2 onion, chopped
- 1 garlic clove, minced
- 1 cup diced tomatoes
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper, to taste
- 1 cup vegetable broth
Instructions

Cut the tops off of the peppers and remove the seeds and membranes.

In a bowl, mix together the rice, black beans, onion, garlic, diced tomatoes, chili powder, cumin, salt, and pepper.

Stuff the mixture into the peppers and place them in the crockpot.

Pour the vegetable broth over the peppers.

Cover and cook on high for 4 hours or until the peppers are tender.
