Ingredients

  • 1 cup dried green lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery ribs, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Combine lentils, broth, tomatoes (with juice), onion, carrots, celery, garlic, cumin, thyme, salt, and pepper in a slow cooker.

  2. Cover and cook on low for 6-8 hours or until lentils are tender.

  3. Garnish with parsley before serving.
