Ingredients

  • 1 block of firm tofu, drained and cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 cup of teriyaki sauce
  • 1 tsp of garlic powder
  • 1 tsp of ginger powder
  • 1 tbsp of cornstarch
  • 2 tbsp of water
  • Cooked rice, for serving

Instructions

  1. In a crockpot, add the tofu, bell peppers, and onion.

  2. In a small bowl, mix the teriyaki sauce, garlic powder, and ginger powder. Pour over the tofu and vegetables and stir to combine.

  3. Cook on high for 3-4 hours.

  4. In a small bowl, mix the cornstarch and water. Add to the crockpot and stir to combine.

  5. Cook for an additional 15-20 minutes until the sauce thickens.

  6. Serve over cooked rice.
