Delicious and easy-to-make crockpot curry loaded with veggies and spices for a hearty and filling vegetarian meal.

Ingredients

  • 1 can (14 oz) of chickpeas, drained and rinsed
  • 1 sweet potato, diced
  • 1 red bell pepper, chopped
  • 1 can (14 oz) of coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste
  • 2 cups of cooked rice for serving
  • Fresh cilantro, chopped for serving

Instructions

  1. Add the chickpeas, sweet potato, red bell pepper, coconut milk, onion, garlic, cumin, coriander, turmeric, cinnamon, cayenne pepper, salt, and pepper into the crockpot. Stir until well combined.

  2. Set the crockpot to low heat and cook for 4 hours or until the vegetables are tender.

  3. Serve the curry over cooked rice and garnish with fresh cilantro.
