Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes, undrained
  • 4 cups vegetable broth
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Add onion, garlic, carrots, celery, zucchini, yellow squash, and red bell pepper to the crockpot.

  2. Add diced tomatoes, vegetable broth, dried basil, dried oregano, salt, and black pepper.

  3. Stir to combine.

  4. Cook on low heat for 4-6 hours, or until vegetables are tender.

  5. Serve hot.
