Ingredients

  • 1 can (14.5 oz) diced tomatoes
  • 1 large eggplant, diced
  • 1 large zucchini, diced
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Add diced tomatoes, eggplant, zucchini, onion, bell pepper, and garlic to crockpot.

  2. Drizzle with olive oil and sprinkle with basil, oregano, salt, and pepper. Stir.

  3. Cover and cook on low for 6 hours.

  4. Serve hot and enjoy!
