Preparation: 20 minutes
Cooking: 1 hour 30 minutes
Total: 1 hour 50 minutes

Serves:

Ingredients

  • 500g boneless lamb leg, thinly sliced
  • 4 pita breads
  • 1 red onion, thinly sliced
  • 1 tomato, thinly sliced
  • 1 cup shredded lettuce
  • 1/4 cup Greek yogurt
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • Salt to taste

Instructions

  1. In a bowl, mix the garlic, olive oil, lemon juice, smoked paprika, cumin, oregano, black pepper, and salt to create a marinade.

  2. Add the sliced lamb to the marinade, ensuring each piece is coated. Let it marinate for at least 1 hour in the refrigerator.

  3. Preheat the grill to medium-high heat. Thread the marinated lamb slices onto skewers.

  4. Grill the lamb skewers for about 6-8 minutes on each side or until cooked through and slightly charred. Remove from the grill and let them rest for a few minutes.

  5. While the lamb is resting, warm the pita breads on the grill or in a toaster.

  6. To assemble the kebabs, spread a spoonful of Greek yogurt on each warm pita bread. Top with sliced red onion, tomato, shredded lettuce, and grilled lamb slices.

  7. Roll up the pita bread tightly and secure it with a toothpick.

  8. Serve the homemade BBQ lamb doner kebab immediately with extra Greek yogurt or your favorite sauce.
