Ingredients

  • 4 salmon fillets
  • 8 cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 cups cooked spaghetti
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine the cooked spaghetti, cherry tomatoes, red onion, garlic, olive oil, lemon juice, salt, and pepper.

  3. Place each salmon fillet on a separate sheet of aluminum foil.

  4. Divide the spaghetti mixture evenly among the salmon fillets, placing it on top of each fillet.

  5. Fold the foil into parcels, ensuring they are tightly sealed.

  6. Place the parcels on a baking sheet and bake for 20-25 minutes, or until the salmon is cooked through.

  7. Carefully open the parcels and transfer the salmon and spaghetti to serving plates.

  8. Garnish with fresh parsley and serve hot.
