This light and easy baked cod with olive oil makes a perfect dish for people trying to watch their weight during the holidays. Don’t think for one second that this simple seafood recipe sacrifices any flavor!

  • 4 cod fish fillets
  • tbsp lemon juice
  • ¼ cup olive oil
  • 2 garlic cloves, crushed
  • ½ tsp thyme
  • 2 tbsp flat leaf parsley, chopped
  • salt and pepper, to taste
  • paprika , optional


  1. Preheat the oven to 400 degrees F then place the fillets in a shallow baking dish.
  2. Drizzle some lemon juice over each fillet then set aside.
  3. In a small bowl, mix together olive oil, crushed garlic, thyme, flat parsley, and salt and pepper. Brush or spoon the oil mixture onto each fillet.
  4. Bake in the oven for 15 to 20 minutes, or until the flesh is completely opaque and juicy.
  5. Serve hot to savor that flaky texture. Enjoy!
