  • 4 chicken thighs
  • 1 pineapple, peeled and cut into chunks
  • 3 tbsp jerk seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish


  1. Preheat the oven to 400°F (200°C).

  2. Place the chicken thighs in a large bowl, then add jerk seasoning and olive oil. Mix until the chicken is coated evenly.

  3. In a large baking tray, arrange the marinated chicken thighs, pineapple chunks, red bell pepper, and red onion slices. Season with salt and pepper.

  4. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the pineapple is caramelized.

  5. Serve the jerk chicken and pineapple traybake hot, garnished with fresh cilantro.
