Ingredients

  • 2 cups of fresh peaches, sliced
  • 1/2 cup of granulated sugar
  • 2 tbsp of cornstarch
  • 1/4 tsp of almond extract
  • 1 tbsp of lemon juice
  • 1 cup of fresh raspberries
  • 1/4 cup of powdered sugar
  • 1 pre-made pie crust
  • whipped cream, for serving

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, combine the sliced peaches, granulated sugar, cornstarch, almond extract, and lemon juice. Mix well.

  3. Roll out the pie crust and place it in a pie dish. Trim the edges as needed.

  4. Pour the peach mixture into the pie crust, spreading it out evenly.

  5. Bake in the preheated oven for 40-45 minutes, until the crust is golden and the filling is bubbly.

  6. While the pie is cooling, prepare the raspberry sauce. In a blender, puree the fresh raspberries and powdered sugar until smooth.

  7. Serve the Peach Melba pie slices drizzled with raspberry sauce and topped with whipped cream.
