How To Make Sweet jacket potato with piri piri prawns recipe

Ingredients
- 4 sweet potatoes
- 1 lb (500g) prawns, peeled and deveined
- 2 tbsp piri-piri sauce
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Pierce each sweet potato several times with a fork and place them on a baking sheet. Bake for 45 minutes or until tender.

Meanwhile, in a bowl, combine the prawns, piri-piri sauce, olive oil, paprika, salt, and pepper. Let marinate for 10 minutes.

Heat a skillet over medium-high heat. Add the marinated prawns and cook for 2-3 minutes on each side, or until pink and cooked through.

Slice open the baked sweet potatoes and stuff them with the cooked prawns.

Garnish with fresh cilantro and serve.
