Ingredients

  • 4 sweet potatoes
  • 1 lb (500g) prawns, peeled and deveined
  • 2 tbsp piri-piri sauce
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Pierce each sweet potato several times with a fork and place them on a baking sheet. Bake for 45 minutes or until tender.

  3. Meanwhile, in a bowl, combine the prawns, piri-piri sauce, olive oil, paprika, salt, and pepper. Let marinate for 10 minutes.

  4. Heat a skillet over medium-high heat. Add the marinated prawns and cook for 2-3 minutes on each side, or until pink and cooked through.

  5. Slice open the baked sweet potatoes and stuff them with the cooked prawns.

  6. Garnish with fresh cilantro and serve.
