How To Make Chorizo, New Potato & Haddock One-Pot Recipe

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 200g chorizo, sliced
- 400g new potatoes, halved
- 400g haddock fillets
- 400g canned chopped tomatoes
- 200ml chicken stock
- 2 tsp paprika
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

Heat the olive oil in a large, deep pan over medium heat. Add the diced onion and minced garlic, and sauté until softened.

Add the sliced chorizo and cook until it starts to release its flavorful oil.

Add the halved new potatoes to the pan and cook for a few minutes, until slightly browned.

Place the haddock fillets on top of the potatoes and chorizo. Pour in the chopped tomatoes and chicken stock.

Sprinkle the paprika, salt, and pepper over the ingredients and gently stir.

Bring the mixture to a simmer, then cover and cook for 20-25 minutes or until the potatoes are tender and the haddock is cooked through.

Serve the one-pot dish hot, garnished with fresh parsley.
