How To Make Jerk Chicken and Pasta

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp jerk seasoning
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup of chicken broth
  • 1 cup of heavy cream
  • 8 oz penne pasta
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken breasts with jerk seasoning and let them marinate for at least 30 minutes.

  2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the diced onion, minced garlic, and sliced red bell pepper. Cook until the vegetables are softened, about 5 minutes.

  4. Pour in the chicken broth and bring to a boil. Reduce the heat and simmer for 10 minutes.

  5. While the sauce is simmering, cook the penne pasta according to package instructions until al dente. Drain and set aside.

  6. Return the chicken to the skillet and add the heavy cream. Cook for an additional 5 minutes, or until the chicken is cooked through.

  7. Add the cooked pasta to the skillet and toss until well coated in the sauce. Season with salt and pepper to taste.

  8. Serve the jerk chicken and pasta hot, garnished with fresh parsley.
