Ingredients

  • 1 sheet of puff pastry
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 cup of cherry tomatoes
  • 1 cup of spinach
  • 1/4 cup of fresh basil, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Roll out the puff pastry sheet and place it in a pie dish, trimming any excess.

  3. In a large bowl, toss the sliced peppers, zucchini, red onion, cherry tomatoes, and spinach with olive oil, salt, and pepper.

  4. Arrange the veggies in a rainbow pattern on top of the pastry.

  5. Sprinkle the chopped basil over the veggies.

  6. Bake in the preheated oven for about 40 minutes, or until the pastry is golden brown and the veggies are tender.

  7. Allow the pie to cool for a few minutes before serving.
