  • 1 cup chunky peanut butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup coconut milk
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Chopped peanuts, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant.

  2. Add the diced carrots and celery to the pot and cook for a few more minutes until they start to soften.

  3. Stir in the chunky peanut butter, vegetable broth, diced tomatoes, coconut milk, cilantro, ground cumin, paprika, salt, and pepper. Bring the soup to a boil.

  4. Reduce the heat and let the soup simmer for about 15-20 minutes, or until the vegetables are tender.

  5. Use an immersion blender or transfer a portion of the soup to a blender and blend until smooth (optional).

  6. Serve the soup hot, garnished with chopped peanuts.
