How To Make Sticky Jerk & Brown Sugar Ribs with Pineapple Rice

Ingredients
- 2 racks of baby back ribs
- 1 cup of jerk sauce
- 1/4 cup of brown sugar
- 2 cups of pineapple juice
- 1 cup of long grain rice
- 1 cup of diced pineapple
- 1/4 cup of chopped cilantro
- Salt to taste
Instructions

Preheat your grill or oven to 300°F (150°C).

Prepare the ribs by removing the membrane from the back and cutting them into individual ribs.

In a small bowl, mix together the jerk sauce and brown sugar.

Generously brush the sauce mixture onto both sides of the ribs.

Place the ribs on the preheated grill or in the oven and cook for 1.5 to 2 hours, or until the meat is tender and cooked through.

While the ribs are cooking, prepare the pineapple rice. In a medium saucepan, bring the pineapple juice to a boil.

Add the rice and a pinch of salt to the boiling pineapple juice, then reduce the heat to low and cover the saucepan.

Simmer the rice for 15-20 minutes, or until the liquid is absorbed and the rice is tender.

Once the rice is cooked, fluff it with a fork and stir in the diced pineapple and chopped cilantro.

Remove the cooked ribs from the grill or oven and let them rest for a few minutes. Slice between the bones to separate into individual ribs.

Serve the sticky jerk and brown sugar ribs with a side of pineapple rice.
